Summary Surface-active compounds (SAC) and emulsifiers, due to their ability reduce interfacial tension, are widely used in various industries. Most of the SAC today produced from non-renewable petrochemical raw materials not safe for living beings environment. Biosurfactants (BS) synthesized by microorganisms renewable materials, particular, food industry waste, they a promising alternative chemical surfactants biological transformation environmental friendliness. The advantage BS marine microbiota is that exhibit activity over wide range temperatures, pH salinity. It shown these biosurfactants, addition surface-active properties, often have other types activity: antimicrobial, antibiofilm, antioxidant. has been established biosurfactants can be industries such as production hygiene products, pharmaceuticals, cosmetology, industry, agriculture, bioremediation, oil production.
